Prepare the Filling

Cook the Meat
In a large skillet, heat the olive oil over medium heat. Add the ground beef or shredded chicken, breaking it apart with a spatula. Cook until browned and no longer pink, about 5-7 minutes.

Season the Meat
Stir in the taco seasoning and a splash of water (about 2 tablespoons). Mix well and simmer for 3-5 minutes until the sauce thickens. Remove from heat and set aside.
Assemble the Burrito

Warm the Tortillas
In a separate skillet or on a griddle, warm the flour tortillas for about 30 seconds on each side until they are pliable.

Fill the Tortillas
On each tortilla, layer a generous portion of the meat filling, followed by a scoop of red sauce, shredded lettuce, diced tomatoes, and shredded cheese.

Roll the Burritos
Fold in the sides of the tortilla and roll it tightly from the bottom up to enclose the filling. Repeat for all tortillas.
Serve the Burritos

Plate the Burritos
Place each burrito on a plate and drizzle more red sauce on top if desired. Add a dollop of sour cream on the side.
