Four corn or flour tortillas filled with beef or chicken, rolled and deep fried. Served with guacamole salad and sour cream.

Flautas Preparation

Prepare the Filling
In a bowl, combine the cooked and shredded beef or chicken with salt, ground cumin, and chili powder. Mix well until the meat is evenly coated with the spices.

Assemble the Flautas
Take a tortilla and place about 1/2 cup of the meat mixture along one edge. Roll the tortilla tightly around the filling and secure it with a toothpick if necessary. Repeat with the remaining tortillas and filling.
Frying

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Flautas
Carefully place the rolled flautas in the hot oil, seam side down. Fry for about 3-4 minutes or until golden brown and crispy on all sides. Remove and drain on paper towels.
Guacamole Salad Preparation

Make the Guacamole
In a mixing bowl, mash the ripe avocados with lime juice. Add diced tomatoes, finely chopped red onion, and chopped cilantro. Season with salt to taste. Mix well until combined.
Serve

Plate the Dish
On a serving plate, arrange the crispy flautas. Serve alongside a generous scoop of guacamole salad and a side of sour cream.
