Method

Caramel Preparation

  1. 1

    Make Caramel

In a medium saucepan, combine 1 cup of granulated sugar and 1 tablespoon of water. Heat over medium heat, stirring gently until the sugar dissolves.

  2. 2

    Cook Caramel

Once the sugar has dissolved, stop stirring and allow it to boil until it turns a golden amber color. This should take about 8-10 minutes. Be careful not to burn it.

  3. 3

    Pour Caramel

Quickly pour the caramel into the bottom of a round cake pan or flan mold, tilting the pan to coat the bottom evenly. Set aside to cool and harden.

Custard Preparation

  1. 4

    Blend Ingredients

In a blender, combine 4 whole eggs, 2 egg yolks, 1 can of sweetened condensed milk, 1 can of evaporated milk, and 1 teaspoon of vanilla extract. Blend until smooth and well combined.

  2. 5

    Strain Mixture

Pour the blended mixture through a fine-mesh sieve into a large bowl to remove any lumps. This ensures a smooth custard.

  3. 6

    Pour into Pan

Carefully pour the custard mixture over the hardened caramel in the cake pan.

Baking

  1. 7

    Prepare Water Bath

Preheat the oven to 350°F (175°C). Place the flan pan inside a larger baking dish and fill the outer dish with hot water until it reaches halfway up the sides of the flan pan.

  2. 8

    Bake Flan

Bake in the preheated oven for about 50-60 minutes, or until the custard is set and a knife inserted in the center comes out clean.

  3. 9

    Cool Flan

Remove the flan from the water bath and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight.

Serving

  1. 10

    Unmold and Serve

To unmold, run a knife around the edges of the flan to loosen it. Place a plate on top of the flan pan, and quickly invert it. Allow the caramel to drizzle over the flan. Serve chilled.
