Marinate the Proteins
In a large bowl, combine the strips of beef, chicken breast, and shrimp. Add olive oil, cumin, paprika, garlic powder, salt, and black pepper. Toss until evenly coated. Cover and marinate in the refrigerator for at least 30 minutes.

Prepare the Vegetables
While the proteins are marinating, slice the bell peppers and onion into thin strips. For the poblano peppers, you can either slice them or keep them whole if you prefer to grill them stuffed later.

Grill the Poblano Peppers
If grilling whole poblano peppers, place them on the grill and cook until the skin is blistered and charred, about 8-10 minutes, turning occasionally.

Combine and Serve
Once everything is cooked, remove from the grill. If using whole poblanos, you can slice them open and stuff with grilled proteins and vegetables. Drizzle ranchero sauce over the top, garnish with fresh cilantro, and serve with lime wedges.
