Method
Prepare the Filling

Cook the Ground Beef
In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.

Mix the Filling
In a large bowl, combine the cooked black beans, cooked ground beef, shredded chicken, and taco seasoning. Mix well until all ingredients are evenly distributed.
Assemble the Enchiladas

Prepare the Tortillas
Warm the corn tortillas in a dry skillet or microwave for 30 seconds to make them pliable.

Fill the Tortillas
Place a portion of the filling mixture in the center of each tortilla. Roll the tortillas tightly around the filling and place them seam-side down in a baking dish.

Add Cheese
Sprinkle the shredded cheese evenly over the top of the enchiladas.
Bake and Serve

Bake the Enchiladas
Preheat your oven to 350°F (175°C). Bake the enchiladas for 20 minutes or until the cheese is melted and bubbly.

Prepare the Toppings
While the enchiladas are baking, prepare the toppings by shredding the lettuce, dicing the tomatoes, and setting out the sour cream.

Once the enchiladas are done baking, remove them from the oven. Serve hot, topped with shredded lettuce, diced tomatoes, and a dollop of sour cream.
