Enchiladas Preparation

Prepare the Tortillas
In a skillet, heat 1 tablespoon of olive oil over medium heat. Lightly fry each corn tortilla for about 10-15 seconds on each side until soft. Drain on paper towels.

Fill the Tortillas
Place about 1/4 cup of shredded chicken in the center of each tortilla. Roll the tortillas tightly and place them seam side down in a greased 9x13 inch baking dish.

Add Sauce and Cheese
Pour the green enchilada sauce over the rolled tortillas. Sprinkle shredded jack cheese evenly on top.

Bake
Preheat the oven to 350°F (175°C). Bake the enchiladas for 20-25 minutes until the cheese is melted and bubbly.
Refried Beans Preparation

Heat the Beans
In a small saucepan, heat the canned refried beans over medium heat until warmed through, stirring occasionally.

Add Cheddar
Once heated, mix in the shredded cheddar cheese until melted and well combined.

Serve with Sour Cream
Serve the refried beans topped with a dollop of sour cream.

In a large bowl, combine chopped lettuce, diced tomato, and diced cucumber.

Dress the Salad
In a small bowl, whisk together olive oil, lime juice, salt, and pepper. Drizzle over the salad and toss to combine.
