Prepare the Churro Dough

Boil the Mixture
In a medium saucepan, combine 1 cup of water, 2 tablespoons of unsalted butter, 1 tablespoon of granulated sugar, and 1 teaspoon of salt. Bring the mixture to a boil over medium heat.

Add Flour
Once boiling, remove the saucepan from heat and stir in 1 cup of all-purpose flour until the mixture forms a ball.

Incorporate Eggs
Let the dough cool for about 5 minutes, then add 2 large eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
Prepare Cinnamon Sugar

Mix Cinnamon Sugar
In a shallow bowl, mix together 1 cup of granulated sugar and 2 tablespoons of ground cinnamon. Set aside.
Fry the Churros

Heat Oil
In a deep frying pan, heat 4 cups of vegetable oil to 375°F (190°C).

Pipe Dough
Transfer the churro dough into a piping bag fitted with a star tip. Carefully pipe strips of dough, about 4-6 inches long, directly into the hot oil.

Fry Churros
Fry the churros for 2-3 minutes on each side, or until golden brown. Use a slotted spoon to remove them from the oil and drain on paper towels.
