For the Tortilla Chips

    Prepare the Tortillas

    Stack the corn tortillas and cut them into triangles (like a pizza). You can cut each tortilla into 6-8 wedges.

    Heat the Oil

    In a large, deep skillet or a heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small piece of tortilla in; if it bubbles immediately, it's ready.

    Fry the Tortilla Chips

    Carefully add a handful of tortilla triangles into the hot oil, making sure not to overcrowd the pan. Fry them for about 2-3 minutes or until they are golden brown and crispy. Turn them occasionally for even cooking.

    Drain and Season

    Using a slotted spoon, remove the fried chips from the oil and place them on a plate lined with paper towels to drain excess oil. While they are still hot, sprinkle with salt to taste.

For the House-Made Salsa

    Chop the Vegetables

    Dice the fresh tomatoes, red onion, and jalapeño pepper (removing seeds if you prefer less heat). Chop the cilantro finely.

    Mix the Salsa

    In a large bowl, combine the chopped tomatoes, red onion, cilantro, and jalapeño. Add the lime juice and salt, and mix well to combine all the ingredients.

    Taste and Adjust

    Taste the salsa and adjust the seasoning if necessary, adding more salt or lime juice to suit your preference.

    Serve

    Transfer the salsa to a serving bowl and serve it alongside the tortilla chips.
