Chipotle Chicken & Shrimp Recipe

Prepare Rice

    Cook the Rice

    In a medium pot, bring 4 cups of chicken broth to a boil. Stir in 2 cups of Mexican rice. Reduce heat to low, cover, and simmer for 18-20 minutes or until rice is tender and liquid is absorbed.

Cook Protein

    Sauté Chicken and Shrimp

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 1 lb of chicken breast cut into bite-sized pieces and cook for about 5-7 minutes until browned.

    Add Shrimp

    Add 1 lb of peeled and deveined shrimp to the skillet and cook for an additional 3-4 minutes until shrimp turns pink.

    Make Chipotle Sauce

    Add 3 minced garlic cloves and 1 chopped medium onion to the skillet. Sauté until the onion is translucent. Then add 2 tablespoons of chipotle peppers in adobo sauce, 2 tablespoons of lime juice, 1 teaspoon of salt, and 1 teaspoon of black pepper. Stir well to combine and cook for another 2-3 minutes.

Prepare Cheese Sauce

    Make Cheese Sauce

    In a saucepan, melt 2 tablespoons of butter over medium heat. Stir in 2 tablespoons of flour and cook for 1-2 minutes until bubbly. Gradually whisk in 1 cup of milk and cook until the mixture thickens. Stir in 1 cup of shredded cheddar cheese until melted and smooth.

Assemble and Serve

    Plate the Dish

    Serve the cooked rice on plates, top with the chipotle chicken and shrimp mixture, and drizzle the cheese sauce over the top. Enjoy!
