Enchiladas
Prepare the Filling
In a mixing bowl, combine the shredded cooked chicken with half of the enchilada sauce and mix well.
Assemble the Enchiladas
Preheat the oven to 350°F (175°C). Take one corn tortilla, spoon about 1/4 cup of the chicken mixture into the center, sprinkle with some shredded cheese, and roll tightly. Place seam side down in a baking dish. Repeat for the remaining tortillas.
Add Sauce and Cheese
Pour the remaining enchilada sauce over the rolled tortillas, and sprinkle the remaining cheese on top.
Garnish
Remove from the oven and let sit for a few minutes. Serve topped with sour cream and chopped cilantro.

Cook Rice
Add the rice to the saucepan and stir to coat. Pour in chicken or vegetable broth, and add salt and black pepper. Bring to a boil.
Simmer
Reduce heat to low, cover, and let simmer for about 15-20 minutes until the rice is tender and the liquid is absorbed.
Fluff and Serve
Remove from heat, fluff the rice with a fork, and let it sit covered for an additional 5 minutes before serving.
