Rinse and measure
Measure rice
Measure 1 1/2 cups long-grain white rice and place it in a fine-mesh sieve or bowl.
Rinse rice under cold running water, stirring with your hand, until the water runs mostly clear (about 30–60 seconds). Drain well. This removes excess surface starch and prevents overly sticky rice.
Cook
Combine ingredients
In a medium saucepan with a tight-fitting lid, combine the rinsed rice, 2 1/4 cups water, 1/2 teaspoon kosher salt, and 1 tablespoon unsalted butter. Stir once to distribute.
Bring to a simmer
Place the saucepan over medium-high heat and bring the water to a gentle boil. Once it comes to a boil, give it a quick stir, reduce heat to low so the liquid is at a bare simmer, and cover tightly with the lid.
Simmer gently
Cook covered on low heat for 15 minutes without lifting the lid or stirring. After 15 minutes, check: the water should be absorbed and rice tender. If tiny pockets of water remain, recover and cook 1–2 minutes more.
Steam off heat
Remove the saucepan from the heat and keep it covered. Let rice rest and steam for 10 minutes. This finishes cooking and firms grains.
Finish and serve
Remove the lid and fluff the rice gently with a fork to separate the grains.
If using optional finishing ingredients, stir in 1 tablespoon chopped fresh parsley, 1/8 teaspoon freshly ground black pepper, and 1/2 tablespoon zest of lime or lemon to brighten flavor. Adjust salt to taste.
Transfer to a serving bowl or plate and serve hot.
