Prepare ingredients

Grate the cheese if not pre-grated. Warm tortillas briefly (10–15 seconds each) in a dry skillet or microwave to make them pliable. Pat any filling components dry if they are very wet to prevent soggy tortillas.

Heat pan

Place a large nonstick or cast-iron skillet over medium heat. Add the butter and oil and swirl to coat the surface. The small amount of oil raises the butter's smoke point so cheese browns without burning.

Create cheese crust

Working one at a time, lay a tortilla flat in the hot skillet. Sprinkle a generous, even layer (about 1/2 cup) of grated cheese over the entire surface of the tortilla, leaving a 1/4-inch edge if desired. Let the cheese melt and start to bubble for 1–2 minutes; it will begin to crisp and turn golden brown on the exposed side that contacts the skillet.

Add filling (optional)

If using fillings, quickly add about 1/4 cup of your chosen filling(s) over half of the tortilla once the cheese is mostly melted but still pliable. Do not overload — the cheese needs to bond to the skillet and tortilla.

Fold & finish

Fold the tortilla in half (or fold over the filling) pressing gently with a spatula so the cheese seals the edges to form a crisp cheese crust. Cook 1–2 more minutes, gently pressing and flipping once, until both sides are golden and the cheese is crisped into a thin crust on the outside. Total from initial cheese melt to finished crisp should be 3–5 minutes per tortilla depending on heat.

Repeat & keep warm

Transfer finished cachetadas to a wire rack set over a baking sheet or a plate lined with paper towel. Keep in a warm oven at 90–100°C (200–210°F) while you finish remaining tortillas so they stay crisp.

Garnish

Sprinkle chopped cilantro over finished cachetadas and season lightly with salt and black pepper to taste. Serve with lime wedges, sour cream/crema, and salsa.

Filling (if using)

Shredded chicken: If using shredded chicken, warm it in a small pan with a pinch of salt and 1–2 tablespoons of water or chicken stock so it is hot and not dry. Sautéed onions & peppers: Thinly slice 1 small onion and 1 small bell pepper. Sauté in 1 teaspoon oil over medium heat until softened and lightly caramelized, about 6–8 minutes. Refried beans: Warm gently in a saucepan or microwave until spreadable.

Assemble filling sparingly: Spoon 1–3 tablespoons of the warmed filling onto half of the tortilla when instructed in 'Add filling'. Spread into an even layer but keep filling within the folded area so the cheese can crisp and seal the edge.

Sauces & Garnish

Prepare sauces: Place sour cream/crema and salsa in small bowls. Cut lime into wedges. Offer pickled jalapeños on the side. Serve each cachetada with a dollop of crema and salsa on the side, squeeze lime over just before eating for brightness.

Serving suggestion: Serve hot and crisp. Leftovers will lose crispness; reheat in a dry skillet 1–2 minutes per side to recrisp.
