Prep
Mix seasoning
In a small bowl combine mild chili powder, ground cumin, garlic powder, onion powder, paprika, salt, and black pepper. Stir to blend.
Warm tortillas by stacking them and wrapping in a damp paper towel or clean kitchen towel; set aside. Prepare toppings (shred lettuce, dice tomatoes, measure cheese, spoon salsa and sour cream into small bowls).
Cook protein
Cook chicken
Heat a large nonstick skillet over medium-high heat. Add 1/2 tbs vegetable oil. When shimmering, add the cut chicken in a single layer. Sprinkle half of the seasoning evenly over the chicken. Cook undisturbed 2–3 minutes until the underside is golden, then stir or flip pieces and cook another 2–3 minutes until cooked through (internal temp 165°F / 74°C). Remove chicken to a plate and cover loosely with foil to keep warm.
Cook steak
Wipe skillet briefly if needed, add remaining 1/2 tbs oil and return to medium-high heat. Add steak strips in a single layer (do not overcrowd; cook in two batches if necessary). Sprinkle remaining seasoning evenly. Cook 1–2 minutes per side for medium (less if you prefer more rare) until nicely browned and cooked to desired doneness. Remove to the plate and let rest 2 minutes, then slice into any larger pieces so all pieces are small and bite-sized for kids.
Assemble tacos
For each child, spoon about 2 oz (a generous 1/4 cup) cooked chicken or steak onto each tortilla. Top with about 2 tablespoons shredded cheddar, a tablespoon of diced tomato, and a tablespoon of shredded lettuce.
Add a small dollop (about 1 teaspoon) of sour cream or plain yogurt and a teaspoon of mild salsa to each taco if desired. Offer lime wedges for squeezing and optional cilantro or pickled jalapeño on the side. Serve immediately so cheese melts slightly from warm protein.
Serving & notes
Leftover cooked protein will keep in refrigerator up to 3 days and can be reheated in a skillet or microwave.
