Preparing Beef Tartare

    Mix the Ingredients

    In a large bowl, combine the finely chopped beef tenderloin, egg yolks, Dijon mustard, chopped capers, chopped cornichons, chopped shallots, Worcestershire sauce, and olive oil. Season with salt and freshly ground black pepper to taste.

    Chill and Serve

    Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. Serve the tartare in a ring mold or on a plate with toasted bread or crackers.

Preparing Béarnaise Sauce

    Make the Reductions

    In a saucepan, combine the minced shallots, white wine vinegar, white wine, and half of the chopped tarragon. Simmer over medium heat until reduced to about 2 tablespoons. Strain the mixture and set aside.

    Prepare the Sauce

    In a heatproof bowl, whisk together the egg yolks and the reduced mixture. Place the bowl over a pot of simmering water (double boiler) and whisk continuously until the mixture thickens.

    Incorporate the Butter

    Slowly whisk in the melted butter, piece by piece, until the sauce is smooth and creamy. Stir in the remaining tarragon and season with salt and freshly ground black pepper to taste.
