Preparing Gnocchi

Make the Dough
In a large bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a dough forms, then knead gently on a floured surface until smooth.

Shape the Gnocchi
Divide the dough into small pieces and roll each into a rope about 1/2 inch thick. Cut into 1-inch pieces. Use a fork to press down on each piece to create ridges.
Cooking Gnocchi

Boil the Gnocchi
Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
Making Arrabbiata Sauce

Sauté Garlic
In a skillet, heat olive oil over medium heat. Add minced garlic and red chili flakes, and sauté until fragrant.

Add Tomatoes
Stir in crushed tomatoes, salt, and black pepper. Simmer for 15-20 minutes until the sauce thickens. Stir in fresh basil before serving.
Making Pesto Sauce

Blend Ingredients
In a food processor, combine basil leaves, pine nuts, minced garlic, Parmesan cheese, olive oil, and salt. Blend until smooth.
