Prepare the Chantilly
In a chilled mixing bowl, whip the heavy cream until it starts to thicken. Gradually add powdered sugar, vanilla extract, and chopped laurel leaves. Continue whipping until soft peaks form. Set aside in the refrigerator.
Crumble Chocolat Blanc

Make the Crumble
Preheat the oven to 180°C (350°F). In a mixing bowl, combine the flour, brown sugar, and salt. Add the cold diced butter and mix until the mixture resembles coarse crumbs. Fold in the chopped white chocolate. Spread the mixture on a baking sheet and bake for 15-20 minutes or until golden brown. Let it cool.

Assemble the Dish
In individual serving dishes, layer fresh raspberries, a generous dollop of Chantilly Laurier, and a sprinkle of the crumble chocolat blanc on top. Garnish with mint leaves before serving.
