Preparing Polenta

Cook the Polenta
In a medium saucepan, bring 4 cups of water and 1 tsp of salt to a boil. Gradually whisk in the polenta to avoid lumps. Reduce heat to low and cook for about 30 minutes, stirring frequently until thick and creamy.

Cool and Shape
Once the polenta is cooked, remove from heat and stir in 2 tbs of olive oil. Pour the polenta into a greased baking dish and spread evenly. Allow it to cool and set for at least 1 hour in the refrigerator.

Cut and Fry
Once set, cut the polenta into fries or desired shapes. Heat oil in a frying pan over medium heat and fry the polenta pieces until golden brown. Drain on paper towels.
Making Aïoli Safran

Combine Ingredients
In a bowl, mix together 1 cup of mayonnaise, 2 minced garlic cloves, and 1/2 tsp of saffron threads that have been soaked in 1 tbsp of warm water for 5 minutes.

Season the Aïoli
Add 1 tbsp of lemon juice, 1/2 tsp of salt, and black pepper to taste. Whisk everything together until smooth.
