    Prepare the batter

    In a large mixing bowl, combine the rice flour, sugar, baking powder, cardamom powder, and salt. Gradually add water to the dry ingredients and mix until you achieve a smooth and thick batter. The batter should be able to flow but not too runny.

    Heat the oil

    In a deep frying pan or kadhai, heat the oil over medium heat. You can test if the oil is ready by dropping a small amount of batter into it; if it sizzles and rises to the surface, the oil is hot enough.

    Fry the Sel Roti

    Using a funnel or your hands, pour a small amount of batter into the hot oil in a circular motion to form a ring. Fry until golden brown on both sides, about 3-4 minutes per side. Remove from oil and drain on paper towels.

    Serve

    Serve the Sel Roti warm in baskets. They can be enjoyed on their own or with tea or yogurt.
