1. Prepare the Sugar Syrup
In a saucepan, combine the sugar, water, and cardamom powder. Bring to a boil and then let it simmer for about 10 minutes until it thickens slightly. Add rose water and turn off the heat. Set aside.
2. Make the Dough
In a mixing bowl, combine the all-purpose flour, milk powder, and baking soda. Add ghee and mix well. Gradually add warm milk to form a soft dough. Let it rest for 15 minutes.
3. Shape the Balls
After resting, divide the dough into small balls, about the size of a marble. Ensure they are smooth and free of cracks.
4. Fry the Balls
Heat oil in a deep frying pan over medium heat. Fry the dough balls in batches until they are golden brown, turning occasionally for even cooking. Remove and drain on paper towels.
5. Soak in Sugar Syrup
Once the fried balls are cool, immerse them in the prepared sugar syrup. Let them soak for at least 30 minutes to absorb the syrup.
6. Serve
Serve warm or at room temperature, garnished with additional cardamom or nuts if desired.
