    Prepare the Batter

    In a large mixing bowl, combine chickpea flour, water, salt, cumin seeds, turmeric powder, and red chili powder. Mix until you have a smooth batter.

    Add Vegetables

    Fold in the sliced potatoes, chopped spinach, sliced onions, and green chilies into the batter until well coated.

    Heat Oil

    In a deep frying pan, heat the oil over medium-high heat. To test if the oil is ready, drop a small amount of batter into the oil; it should sizzle and rise to the surface.

    Fry the Pakoras

    Using a spoon, drop spoonfuls of the batter-coated vegetables into the hot oil. Fry in batches, making sure not to overcrowd the pan. Cook until golden brown and crispy, about 3-4 minutes on each side.

    Drain and Serve

    Remove the pakoras from the oil and drain on paper towels. Serve hot with chutney or sauce of your choice.
