Preparation

Preparing the Lentils

1. Cook the Lentils

In a pot, combine the red lentils, turmeric, salt, and water. Bring to a boil, then reduce heat and simmer for 20 minutes or until lentils are soft.

Cooking the Rice

2. Cook the Rice

In a separate pot, rinse the basmati rice until the water runs clear. Combine with water and salt, bring to a boil, then reduce heat and cover. Cook for 15 minutes or until the rice is fluffy.

Making the Saag

3. Stir-fry the Greens

In a pan, heat oil over medium heat. Add the minced garlic and sauté until fragrant. Add turnip and mustard greens, season with salt, and stir-fry for 5-7 minutes until wilted.

Preparing the Achar

4. Make the Quick Pickle

In a bowl, combine the sliced radish, lemon juice, salt, and chili powder. Mix well and let sit for at least 10 minutes.
