    In a shallow dish, combine the white fish fillets with lime juice, salt, and black pepper. Make sure the fillets are well coated. Cover and let marinate in the refrigerator for at least 30 minutes.

Veracruz Sauce

    In a large skillet over medium heat, add the olive oil. Once hot, add minced garlic and diced onion. Sauté for about 2-3 minutes until the onion becomes translucent.

    Add the diced red and green bell peppers and continue to sauté for another 2-3 minutes until the peppers soften.

    Stir in the diced tomatoes, sliced olives, and capers. Let the mixture simmer for about 10 minutes until the tomatoes break down and create a sauce.
