Burrito Assembly

Method

Burrito Filling

  1. 1

    Prepare the Vegetables

Dice the red and green bell peppers and red onion into small pieces. Set aside.

  2. 2

    Cook the Filling

In a large skillet, heat the olive oil over medium heat. Add the diced red onion, red bell pepper, and green bell pepper. Sauté for about 5 minutes until the vegetables are tender.

  3. 3

    Add the Beans and Corn

Stir in the black beans and corn. Cook for another 3-4 minutes until heated through.

  4. 4

    Season the Filling

Add the cumin, chili powder, garlic powder, salt, and black pepper. Mix well and cook for an additional 2 minutes.

  5. 5

    Add Spinach

Stir in the spinach and cook until wilted, about 1-2 minutes. Remove from heat.

Burrito Assembly

  1. 6

    Prepare the Tortillas

Warm the large tortillas in a dry skillet or microwave for a few seconds to make them pliable.

  2. 7

    Assemble the Burrito

Lay a tortilla flat on a clean surface. Spoon a portion of the veggie filling onto the center of the tortilla.

  3. 8

    Add Avocado and Sour Cream

Slice the avocado and add a few slices on top of the filling. Add a dollop of sour cream and sprinkle with shredded cheese if using.

  4. 9

    Roll the Burrito

Fold the sides of the tortilla over the filling and then roll it up from the bottom to the top. Ensure it's tightly wrapped.

  5. 10

    Serve

Repeat the assembly process with the remaining tortillas. Serve immediately.
