Preparing the Chicken

Marinate the Chicken
In a bowl, combine olive oil, cumin, paprika, garlic powder, salt, and black pepper. Add the chicken breasts and coat well. Let marinate for at least 30 minutes.

Cook the Chicken
Heat a skillet over medium-high heat. Add the marinated chicken breasts and cook for about 6-7 minutes on each side or until fully cooked and juices run clear. Remove from heat and let rest before slicing.

Cook the Rice
Add the long grain white rice and stir for another minute. Add the chicken broth, diced tomatoes, chili powder, and salt. Bring to a boil, then reduce heat, cover, and simmer for about 20 minutes or until the rice is cooked and liquid is absorbed.
Making the Cheese Sauce

Add Milk and Cheese
Gradually whisk in the milk, stirring continuously until the mixture thickens. Add the shredded cheddar cheese and stir until melted. Season with salt and black pepper to taste.
Assembling the Dish

Layer the Ingredients
On a serving plate, place a generous portion of the Mexican rice as the base. Top with sliced chicken, then drizzle the cheese sauce over.

Add Toppings
Sprinkle shredded mozzarella cheese on top and serve with warm tortillas on the side.
