Sopapilla Preparation

    Make the Dough

    In a large bowl, combine the all-purpose flour, baking powder, and salt. Mix well.

    Add Fat

    Cut in the lard or shortening into the flour mixture until it resembles coarse crumbs.

    Add Water

    Add warm water, a little at a time, mixing until a soft dough forms.

    Knead the Dough

    Turn the dough out onto a floured surface and knead gently for about 5 minutes until smooth.

    Rest the Dough

    Cover the dough with a clean kitchen towel and let it rest for 30 minutes.

Frying and Serving

    After resting, roll out the dough to about 1/4 inch thick on a floured surface.

    Cut the dough into squares or triangles. Heat vegetable oil in a deep frying pan over medium heat. Fry the dough pieces until golden brown on both sides, about 2-3 minutes per side.
