Mix Dry Ingredients
In a large mixing bowl, combine 2 cups of all-purpose flour, 1 tsp of baking powder, 1 tsp of salt, and 2 tbs of sugar. Whisk together until well blended.

Add Shortening
Add 1 tbs of vegetable shortening to the dry ingredients. Use your fingers or a pastry cutter to incorporate the shortening until the mixture resembles coarse crumbs.

Add Liquids
Stir in 3 tbs of warm water and 1 tbs of milk. Mix until a dough forms. If the dough is too sticky, add a little more flour as needed.

Knead Dough
Turn the dough out onto a floured surface and knead for about 2-3 minutes until smooth. Form it into a ball and cover it with a cloth. Let it rest for 30 minutes.

Roll Out the Dough
After the dough has rested, roll it out on a floured surface to about 1/8 inch thick. Cut into squares or triangles, about 3 inches in size.

Fry the Sopapillas
Carefully drop the dough pieces into the hot oil, frying them in batches to avoid overcrowding. Fry for about 1-2 minutes on each side until they puff up and turn golden brown.

Remove the sopapillas with a slotted spoon and drain on paper towels. Let them cool slightly before serving.
