Preparing the Filling

    Cook the Chicken

    If not already cooked, boil or grill chicken until fully cooked. Let it cool and shred into small pieces.

    Mix the Filling Ingredients

    In a mixing bowl, combine shredded chicken, chopped onion, chopped cilantro, and 1/2 cup of enchilada sauce. Stir until well mixed. Season with a pinch of salt to taste.

    Add Cheese

    Fold in 1/2 cup of shredded cheese into the filling mixture.

Assembling the Enchilada

    Warm the Tortilla

    Lightly heat the corn tortilla in a dry skillet over medium heat for about 30 seconds on each side to make it pliable.

    Fill the Tortilla

    Place the filling mixture in the center of the warmed tortilla. Roll it up tightly, folding the ends in to secure the filling.

    Add Enchilada Sauce

    Spread the remaining enchilada sauce over the rolled enchilada and sprinkle the remaining shredded cheese on top.

    Bake

    Preheat the oven to 375°F (190°C) and bake the enchilada for 15-20 minutes, or until the cheese is melted and bubbly.

    Garnish and Serve

    Remove from the oven and let it cool for a few minutes. Top with sour cream, sliced avocado, and black olives before serving.
