Method
Preparation of Seafood
- 1
Marinate the Seafood
In a large bowl, combine shrimp, scallops, calamari, and white fish. Drizzle with olive oil, lime juice, salt, black pepper, cumin, and paprika. Mix well, ensuring all seafood is coated. Cover and let marinate in the refrigerator for at least 30 minutes.
Sautéing Vegetables
- 2
Cook the Vegetables
In a large skillet over medium heat, add 2 tablespoons of olive oil. Once heated, add chopped onion and minced garlic. Sauté for 3-4 minutes until the onion is translucent. If desired, add chopped jalapeño and cook for an additional 2 minutes. Stir in diced tomatoes and cook for another 3-4 minutes until softened.
Combining Ingredients
- 3
Combine Seafood and Vegetables
Add the marinated seafood mixture to the skillet with the sautéed vegetables. Cook over medium heat for about 5-7 minutes, or until the seafood is cooked through and opaque. Gently stir to prevent sticking.
Finishing Touches
- 4
Add Cilantro
Once the seafood is cooked, remove from heat and stir in chopped cilantro. Adjust seasoning with more salt and lime juice if necessary.
Serving
- 5
Serve the Molcajete
Transfer the seafood mixture to a large serving dish or a traditional molcajete. Serve warm with tortilla chips, lime wedges, and extra cilantro for garnish.
