Masa Dough Preparation

    Combine Ingredients

    In a large mixing bowl, combine masa harina and salt. Gradually add warm water while mixing with your hands until a soft dough forms.

    Knead the Dough

    Knead the dough for about 5 minutes until it is smooth and pliable. Cover the dough with a damp cloth to keep it moist.

    Shape the Disks

    Divide the dough into equal portions (about 12-14 balls). Flatten each ball into a disk about 1/4 inch thick using a tortilla press or a rolling pin.

Frying the Salbutes

    Heat Oil

    In a large saucepan or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Disks

    Carefully place each disk into the hot oil, frying them for about 1-2 minutes on each side, or until they puff up and become golden brown.

    Drain Excess Oil

    Using a slotted spoon, remove the salbutes from the oil and place them on a paper towel-lined plate to drain any excess oil.

Assembling the Salbutes

    Spread a layer of refried beans over each salbute, followed by a generous amount of cochinita pibil.

    Top with pickled red onions and sprinkle micro cilantro on top for garnish.
