    In a large bowl, combine olive oil, lime juice, minced garlic, cumin, oregano, salt, and black pepper. Add the skirt steak, shrimp, and chorizo. Ensure all proteins are well-coated. Cover and marinate in the refrigerator for at least 30 minutes.

    While the proteins are marinating, chop the bell peppers, red onion, and jalapeño. Set aside. Chop the cilantro and reserve for garnish.

Cook the skirt steak for about 5-7 minutes per side for medium-rare, shrimp for 2-3 minutes per side until pink, and chorizo until fully cooked, about 7-10 minutes. Remove from heat and let rest.
