Assemble the Quesadillas
In a large mixing bowl, combine the sautéed vegetables, cooked shredded chicken, and chopped cilantro. Mix well to combine. Take one tortilla, spread a generous portion of the mixture on one half, and top with 1/2 cup of shredded cheese. Fold the tortilla over to create a half-moon shape.

In the same skillet, add the folded quesadilla and cook for about 3-4 minutes on each side until golden brown and the cheese has melted. Repeat with the remaining tortillas and filling.
