Prepare the Ingredients
Start by gathering all the ingredients needed for the mini quesadillas. Shred the cooked chicken breast and dice the bell pepper into small pieces.

Heat the Pan
In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Assemble the Quesadilla
Place one flour tortilla in the heated skillet. Sprinkle a quarter cup of cheddar cheese and a quarter cup of Monterey Jack cheese evenly over the tortilla. Add a quarter cup of shredded chicken and a few pieces of diced bell pepper on top of the cheese.

Cook for about 2-3 minutes or until the bottom side is golden brown and the cheese begins to melt. Carefully fold the tortilla in half.

Use a spatula to flip the folded quesadilla over and cook for an additional 2-3 minutes until the other side is golden brown and the cheese is fully melted.

Remove the cooked quesadilla from the skillet and set it aside on a cutting board. Repeat the assembly and cooking process with the remaining tortillas and filling.
