Prepare Rice

Cook the Rice
In a medium saucepan, combine 1 cup of white rice, 2 cups of water, and 1 tsp of salt. Bring to a boil over medium-high heat.

Simmer
Once boiling, reduce the heat to low, cover the saucepan, and let the rice simmer for about 18-20 minutes, or until the water is absorbed and the rice is tender.

Fluff and Set Aside
Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and set aside.
Prepare Taco Filling

Cook Ground Beef
In a large skillet over medium heat, add 1 lb of ground beef. Cook until browned, breaking it apart with a spoon, about 5-7 minutes.

Add Seasoning
Drain excess fat if necessary, then add 2 tablespoons of taco seasoning to the skillet. Stir well and cook for an additional 2-3 minutes, until the beef is coated with the seasoning.

Optional Chicken
If using shredded chicken, you can either mix it with the seasoned beef or serve it on the side for kids to choose.
Assemble Tacos

Prepare Taco Shells
Warm the taco shells according to the package instructions (if using soft tortillas, simply warm them in a skillet for a few seconds on each side).

Fill Tacos
In each taco shell, add a generous portion of the cooked ground beef or shredded chicken.

Add Toppings
Top with shredded lettuce, diced tomato, and shredded yellow cheese as desired.
