Method

Preparing Cilantro Oil

  1. 1

    Blend Ingredients

In a blender, combine fresh cilantro, olive oil, garlic cloves, and lime juice. Blend until smooth and well combined.

  2. 2

    Strain Cilantro Oil

Pour the blended mixture through a fine mesh strainer into a bowl to remove the solids. Set aside the cilantro oil.

Grilling Panela Cheese

  1. 3

    Preheat Grill

Preheat your grill or grill pan to medium heat.

  2. 4

    Slice Cheese

Cut the panela cheese into thick slices (about 1 inch) to prevent it from falling apart on the grill.

  3. 5

    Grill Cheese

Place the panela cheese slices on the grill. Cook for about 3-4 minutes on each side, or until grill marks appear and the cheese is warmed through.

Preparing Toppings

  1. 6

    Prepare Avocado

Slice the avocado in half, remove the pit, and scoop the flesh out. Cut the avocado into thin slices.

  2. 7

    Prepare Watermelon Radish

Thinly slice the watermelon radish using a mandoline or sharp knife.

  3. 8

    Prepare Pork Rinds

If needed, crush the pork rinds into smaller pieces for easy topping.

Assembling the Dish

  1. 9

    Serve

On a plate, place the grilled panela cheese. Drizzle with cilantro oil. Top with avocado slices, watermelon radish slices, and crushed pork rinds. Serve with warm corn tortillas on the side.
