Wash and Cut Potatoes
Scrub the Russet potatoes under cold running water to remove any dirt. Cut each potato into thin strips, about 1/4 inch wide, to create fries. Place the cut fries in a bowl of cold water to soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

In a deep fryer or large heavy-bottomed pot, heat the vegetable oil to 350°F (175°C). Ensure there is enough oil to submerge the fries completely.

Dry and Fry Potatoes
After soaking, drain the fries and pat them dry with paper towels. Carefully add a batch of fries to the hot oil, being careful not to overcrowd the pot. Fry for about 5-6 minutes or until golden brown and crispy. Use a slotted spoon to remove the fries and place them on a plate lined with paper towels to absorb excess oil.
