Prepare the Filling

    Cook the Potatoes

    In a large pot, add the russet potatoes and cover with water. Bring to a boil and cook until tender, about 20 minutes. Drain and allow to cool slightly.

    Once the potatoes are cool enough to handle, peel them and mash in a large bowl until smooth.

    Add the shredded cheddar cheese, finely chopped onion, minced garlic, chopped cilantro, salt, and black pepper to the mashed potatoes. Mix until well combined.

Assemble the Flautas

    Prepare the Tortillas

    In a skillet, heat a small amount of vegetable oil over medium heat. Briefly fry each corn tortilla for about 10-15 seconds on each side until soft but not crispy. Remove and place on a clean towel to drain.

    Take one tortilla and add about 2-3 tablespoons of the potato filling to the center. Roll the tortilla tightly around the filling and secure with a toothpick if necessary. Repeat with remaining tortillas and filling.

    In a large frying pan, heat the vegetable oil over medium-high heat until hot.
