Prepare Caramel

    Cook the Sugar

    In a medium saucepan over medium heat, combine 1 cup of sugar and 1 tablespoon of water. Stir gently until the sugar has dissolved.

    Caramelize the Sugar

    Continue cooking without stirring until the mixture turns a golden amber color. This should take about 5-7 minutes.

    Pour Caramel into Molds

    Quickly pour the caramel into the bottom of your flan molds or a round baking dish, tilting to coat the bottom evenly. Set aside to cool and harden.

Prepare Flan Base

    Blend Ingredients

    In a blender, combine 1 cup of sweetened condensed milk, 1 cup of evaporated milk, 3 large eggs, 1 teaspoon of vanilla extract, and 3 tablespoons of sugar. Blend until smooth.

    Strain Mixture

    Pour the blended mixture through a fine mesh strainer into a bowl to remove any egg solids and ensure a smooth texture.

Bake the Flan

    Preheat Oven

    Preheat your oven to 350°F (175°C).

    Prepare Baking Dish

    Place the caramel-coated molds in a larger baking dish. Add hot water to the larger baking dish until it reaches halfway up the sides of the molds.

    Pour Flan Mixture

    Pour the flan mixture evenly into the caramel-coated molds.

    Bake in the preheated oven for about 45-55 minutes, or until the flan is set but still slightly jiggly in the center.

    Remove from the oven and let cool at room temperature. Once cooled, refrigerate for at least 4 hours or overnight.
