Fajita Filling Preparation

    Prepare the Chicken

    Cut the chicken breast into thin strips. In a bowl, combine the chicken strips with fajita seasoning and toss to coat evenly.

    Cook the Vegetables

    Slice the bell peppers and onion into thin strips. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced vegetables and sauté for about 5 minutes until they are tender but still crisp. Remove them from the skillet and set aside.

    Cook the Chicken

    In the same skillet, add the remaining tablespoon of olive oil. Add the seasoned chicken strips and cook for about 7-10 minutes or until the chicken is fully cooked and no longer pink in the center.

    Combine Filling

    Once the chicken is cooked, add the sautéed bell peppers and onions back into the skillet. Stir well to combine and cook for an additional 2 minutes. Remove from heat and set aside.

Quesadilla Assembly and Cooking

    Assemble the Quesadilla

    Place a flour tortilla in a clean skillet over medium heat. Sprinkle about 1/2 cup of shredded cheese evenly over the tortilla. Add a generous portion of the fajita filling on top of the cheese, then sprinkle another 1/2 cup of cheese on top of the filling. Top it with another tortilla.

    Cook the Quesadilla

    Cook for 3-4 minutes or until the bottom tortilla is golden brown and the cheese has started to melt. Carefully flip the quesadilla using a spatula and cook for an additional 3-4 minutes until the other side is golden brown and the cheese is completely melted.

    Slice and Serve

    Remove the quesadilla from the skillet and let it cool for a minute. Slice into wedges and serve hot with sour cream, guacamole, and salsa on the side.
