Filling Preparation

  1. 1

    Sauté Spinach

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic, and sauté for about 1 minute until fragrant.

  2. 2

    Cook Spinach

Add the fresh spinach to the skillet, season with salt and black pepper, and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.

  3. 3

    Combine Ingredients

In a mixing bowl, combine the sautéed spinach mixture with ricotta cheese, shredded mozzarella, and chopped green onions. Mix well until all ingredients are evenly incorporated.

Assembly

    Preheat Oven

Preheat your oven to 350°F (175°C).

  2. 5

    Prepare Tortillas

Warm the corn tortillas slightly in a microwave or on a skillet until pliable.

  3. 6

    Fill Tortillas

Place a few tablespoons of the spinach filling in the center of each tortilla. Roll them up tightly and place seam-side down in a baking dish.

  4. 7

    Add Sauce

Pour the enchilada sauce evenly over the rolled tortillas, and sprinkle cumin and chili powder on top.
