Add Chicken and Spices
Stir in the shredded cooked chicken, chipotle peppers, ground cumin, and salt. Mix well and cook for another 3-4 minutes until heated through. Remove from heat and set aside.

In a blender, combine chipotle peppers, diced tomatoes, vegetable broth, lime juice, olive oil, and salt. Blend until smooth and set aside.
Assemble the Enchiladas

Prepare Tortillas
In a separate skillet, lightly warm the corn tortillas one at a time over medium heat for about 30 seconds on each side to make them pliable.

Fill Tortillas
On each tortilla, place a generous amount of the chicken filling, then roll tightly and place seam-side down in a greased baking dish.

Top with Sauce and Cheese
Once all tortillas are filled and rolled, pour the chipotle sauce evenly over the enchiladas. Sprinkle shredded cheese on top.
