Make Achiote Marinade
In a blender, combine the achiote paste, orange juice, lime juice, garlic cloves, oregano, salt, and pepper. Blend until smooth and well combined.
Marinating the Pork

Marinate the Pork
Place the pork shoulder in a large bowl or a resealable plastic bag. Pour the achiote marinade over the pork, ensuring it's well coated. Seal the bag or cover the bowl and refrigerate for at least 4 hours, preferably overnight.

Prepare Banana Leaves
If using fresh banana leaves, briefly pass them over an open flame to make them pliable. Cut them into pieces large enough to wrap the pork.
Cooking the Pork

Wrap and Cook
Preheat your oven to 150°C (300°F). Place the marinated pork on a large piece of banana leaf. Wrap it tightly, then wrap it again with another piece of banana leaf. Place the wrapped pork in a baking dish and cover with aluminum foil. Bake for 4 to 5 hours until the pork is tender.

Serve the Cochinito Pibil
Once cooked, remove the pork from the oven and let it rest for 15 minutes. Unwrap the banana leaves and shred the pork with two forks. Serve with sliced red onion, cilantro, and lime wedges on the side.
