Preparing the Marinade

Blend the Marinade
In a blender, combine the achiote paste, Seville orange juice, garlic cloves, salt, and black pepper. Blend until smooth.

Marinate the Pork
Cut the pork shoulder into large chunks and place them in a large bowl. Pour the marinade over the pork and toss to coat evenly. Cover and refrigerate for at least 4 hours, preferably overnight.

Prepare the Banana Leaves
Soak the banana leaves in hot water for about 10 minutes to soften them. Drain and pat dry.

Wrap the Pork
Lay out 2 pieces of banana leaves, overlapping them slightly. Place the marinated pork in the center and wrap it tightly. Use additional banana leaves if necessary to ensure the pork is completely covered.

Bake the Pork
Preheat the oven to 325°F (160°C). Place the wrapped pork in a baking dish and cover it with aluminum foil. Bake for about 3 hours or until the pork is tender and easily shredded.

Once the pork is done, carefully unwrap it and shred the meat using two forks.
