Prepare the Marinade
In a large bowl, combine soy sauce, vinegar, minced garlic cloves, bay leaves, black peppercorns, red pepper flakes, and brown sugar. Stir well to dissolve the sugar.

Marinate the Pork
Cut the pork shoulder into large chunks and add it to the marinade. Cover and refrigerate for at least 2 hours, or overnight for best flavor.

Add the Marinated Pork
Remove the pork from the marinade (reserving the marinade) and add it to the pot. Sear the pork on all sides until browned.

Pour the reserved marinade over the pork in the pot, then add 1 cup of water. Bring to a boil, then reduce heat to low. Cover and simmer for about 1.5 hours, or until the pork is tender.
