    Prepare the Marinade

    In a large bowl, combine soy sauce, vinegar, minced garlic cloves, bay leaves, black peppercorns, red pepper flakes, and brown sugar. Stir well to dissolve the sugar.

    Marinate the Pork

    Cut the pork shoulder into large chunks and add it to the marinade. Cover and refrigerate for at least 2 hours, or overnight for best flavor.

    Sauté the Vegetables

    In a large pot, heat olive oil over medium heat. Add chopped onion and green bell pepper, sautéing until the onion is translucent.

    Remove the pork from the marinade (reserving the marinade) and add it to the pot. Sear the pork on all sides until browned.
