Burrito Preparation

Cook the Chicken
In a large skillet over medium heat, cook the chicken breasts until fully cooked, about 6-8 minutes per side. Shred the chicken and set aside.

Prepare the Burrito Filling
In a large bowl, mix the shredded chicken, refried beans, and 1 cup of mozzarella cheese until well combined.

Assemble the Burritos
Lay out a flour tortilla on a flat surface. Spoon 1/4 of the chicken mixture onto the center of the tortilla. Fold in the sides and roll up tightly to enclose the filling. Repeat for all tortillas.

Make the Specialty Sauce
In a mixing bowl, combine sour cream, salsa, hot sauce, and chopped cilantro. Stir until well blended. Set aside.
Baking

Bake the Burritos
Preheat the oven to 375°F (190°C). Place the assembled burritos in a baking dish. Pour the specialty sauce over the top and sprinkle with the remaining mozzarella cheese. Bake for 20-25 minutes, until the cheese is melted and bubbly.

Prepare the Sides
While the burritos are baking, cook the poblano rice according to package instructions, and heat the charro beans on the stove until warm.

Once the burritos are baked, serve them hot with a side of poblano rice and charro beans.
