Beans

Method

Preparation

  1. 1

    Soak the Beans

Rinse the dried black beans under cold water to remove any debris. In a large bowl, add the beans and cover them with 4 cups of water. Let them soak overnight or for at least 8 hours.

  2. 2

    Drain and Rinse

After soaking, drain the beans and rinse them under cold water again. This helps to reduce the gas-producing compounds in the beans.

Cooking

  1. 3

    Cook the Beans

In a large pot, add the soaked and rinsed beans along with 4 cups of fresh water. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and simmer for 1 to 1.5 hours, or until the beans are tender.

  2. 4

    Sauté the Aromatics

In a separate skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for about 5 minutes, or until the onion becomes translucent.

  3. 5

    Add Seasonings

Once the onions and garlic are cooked, stir in the cumin, salt, black pepper, and chili powder. Cook for an additional 2 minutes to allow the spices to release their flavors.

  4. 6

    Combine and Simmer

Once the beans are tender, drain them (if necessary) and add them to the skillet with the sautéed aromatics. Stir to combine. Add lime juice and simmer on low heat for another 5-10 minutes to let the flavors meld.
