Marinade Preparation

Prepare the chilies
Remove the stems and seeds from the dried guajillo and ancho chilies. Soak them in hot water for about 15 minutes until they become soft.

Blend the marinade
In a blender, combine the soaked chilies, pineapple juice, garlic, white vinegar, ground cumin, oregano, salt, and black pepper. Blend until smooth.

Marinate the pork
Place the pork shoulder in a large bowl or zip-top bag and pour the marinade over it. Ensure the pork is well coated. Marinate in the refrigerator for at least 4 hours, preferably overnight.
Cooking the Pork

Preheat the grill or oven
If using a grill, preheat it to medium-high heat. If using an oven, preheat it to 375°F (190°C).

Cook the pork
Remove the pork from the marinade and let any excess marinade drip off. Grill or roast the pork for about 1.5 to 2 hours, or until it reaches an internal temperature of 145°F (63°C).

Once cooked, remove the pork from the heat and let it rest for 10-15 minutes before slicing.
