Marinade

Method

Marinade Preparation

  1. 1

    Prepare the chilies

Remove the stems and seeds from the dried guajillo and ancho chilies. Soak them in hot water for about 15 minutes until they become soft.

  2. 2

    Blend the marinade

In a blender, combine the soaked chilies, pineapple juice, garlic, white vinegar, ground cumin, oregano, salt, and black pepper. Blend until smooth.

  3. 3

    Marinate the pork

Place the pork shoulder in a large bowl or zip-top bag and pour the marinade over it. Ensure the pork is well coated. Marinate in the refrigerator for at least 4 hours, preferably overnight.

Cooking the Pork

  1. 4

    Preheat the grill or oven

If using a grill, preheat it to medium-high heat. If using an oven, preheat it to 375°F (190°C).

  2. 5

    Cook the pork

Remove the pork from the marinade and let any excess marinade drip off. Grill or roast the pork for about 1.5 to 2 hours, or until it reaches an internal temperature of 145°F (63°C).

  3. 6

    Rest the pork

Once cooked, remove the pork from the heat and let it rest for 10-15 minutes before slicing.

Assembly

  1. 7

    Prepare the tacos

Warm the corn tortillas on the grill or in a skillet. Slice the rested pork into thin pieces.

  2. 8

    Serve

Assemble the tacos by placing the sliced pork on the warm tortillas. Top with diced pineapple, onion, and chopped cilantro. Serve with lime wedges on the side.
