Prepare the Artichokes
Drain the artichoke hearts and pat them dry with paper towels to remove excess moisture.

Make the Battering Mixture
In a large bowl, combine the all-purpose flour, cornstarch, salt, and pepper. In another bowl, whisk together the eggs and milk until well combined.

Batter the Artichokes
Dip each artichoke heart into the flour mixture, then into the egg mixture, and back into the flour mixture to coat thoroughly.

Fry the Artichokes
Heat the oil in a deep skillet over medium-high heat. Once hot, carefully place the battered artichoke hearts in the oil and fry until golden brown, about 3-4 minutes on each side. Remove and drain on paper towels.

Serve the fried artichoke hearts hot with a dollop of cream sauce on the side.
