    Chop the bell peppers, red onion, and mushrooms into small pieces. Rinse the spinach under cold water and set aside.

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped bell peppers, red onion, and mushrooms. Sauté for 5-7 minutes until they are tender.

    Stir in the spinach, cumin, chili powder, salt, and black pepper. Cook for an additional 2-3 minutes until the spinach wilts and the spices are fragrant.

Assembling Quesadillas
