Prepare the Marinade

In a blender, combine chipotle peppers, garlic, lime juice, cumin, and salt. Blend until smooth.

Marinate the Pork

In a large bowl, place the pork shoulder and pour the marinade over it. Ensure the pork is well coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Grill the Pork

Preheat the grill to medium-high heat. Remove the pork from the marinade and brush lightly with olive oil. Grill for about 6-8 minutes per side, or until the internal temperature reaches 145°F (63°C).

Rest the Pork

Once cooked, remove the pork from the grill and let it rest for 10 minutes before slicing.

Rinse the Rice

Rinse the long-grain rice under cold water until the water runs clear.

Cook the Rice

In a pot, combine the rinsed rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until rice is tender and water is absorbed.

Preparing the Beans

Heat the Beans

In a saucepan, combine the canned black beans (drained and rinsed), cumin, garlic powder, and salt. Heat over medium heat until warmed through, about 5-7 minutes.
