Prepare the Pork
Cut the pork shoulder into small cubes, about 1-inch pieces. This will help it cook evenly.
Chop Vegetables
Dice the tomatoes, onion, and bell pepper into small pieces. Set aside.
Cooking
Sauté the Pork
In a large skillet, heat the olive oil over medium heat. Add the pork cubes and cook until browned, about 5-7 minutes.
Add Vegetables and Seasonings
Add the diced onion, bell pepper, and tomatoes to the skillet. Stir in the garlic powder, cumin, salt, black pepper, and chili powder. Cook for an additional 10-15 minutes, stirring occasionally, until the pork is cooked through and the vegetables are tender.
Assembling the Burrito
Fill the Tortillas
Lay a flour tortilla flat on a clean surface. Spoon a portion of the pork and vegetable mixture onto the center of the tortilla.
Add Cheese
Sprinkle shredded cheese over the pork mixture.
Roll the Burrito
Fold the sides of the tortilla over the filling and then roll from the bottom up to encase the filling completely.
Final Touch
Serve
Place the burritos seam-side down on a plate. Serve warm with additional toppings of your choice, such as sour cream or salsa.
